A versatile and easy recipe for perfectly roasted pepitas, seasoned with sweet, savory, or spicy flavors. These crunchy roasted pumpkin seeds make a delicious snack or healthy salad topping, featuring simple ingredients and a quick baking method.

  • Total Time: 17 minutes
  • Yield: About 2 cups roasted pepitas

Ingredients

Basic Roasted Pepitas

  • 2 cups | 300 g raw pepitas
  • 1 tablespoon | 15 ml olive oil
  • 1/2 teaspoon sea salt (or to taste)

Sweet Roasted Pepitas

  • 2 cups | 300 g raw pepitas
  • 2 teaspoons | 10 ml melted coconut oil
  • 1 teaspoon ground cinnamon
  • 1 tablespoon maple syrup or honey

Savory Roasted Pepitas

  • 2 cups | 300 g raw pepitas
  • 1 tablespoon | 15 ml olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon sea salt

Instructions

  1. Preheat the oven: Set your oven to 350°F (180°C) and line a large baking sheet with baking paper. This ensures even heat distribution and easy cleanup.
  2. Prepare the pepitas: In a large bowl, combine 2 cups of raw pepitas with your choice of oil or melted butter, sweetener if using, and seasonings. Stir well to coat all pepitas evenly with the flavorings.
  3. Arrange on baking sheet: Spread the coated pepitas in a single layer across the lined baking sheet, ensuring they are well spaced for even roasting.
  4. Bake the pepitas: Place the baking sheet in the middle rack of the oven and roast for 10-12 minutes. Around the 6-minute mark, remove the tray and stir the pepitas to promote even cooking and prevent burning.
  5. Cool the pepitas: After baking, allow the pepitas to cool on the baking sheet. Plain pepitas take about 5 minutes to cool, while those with sweeteners need closer to 10 minutes to set properly.
  6. Serve: Enjoy the roasted pepitas as a crunchy snack on their own or use them to enhance salads, soups, or other dishes with added texture and flavor.

Notes

  • You can experiment with different spices and seasoning blends according to your taste preferences.
  • Make sure to stir the pepitas halfway through baking to ensure even roasting and avoid burning.
  • Cool the pepitas completely before storing to maintain their crispiness.
  • Store in an airtight container at room temperature for up to 1 week.
  • If using sweeteners like honey or maple syrup, be careful not to overbake as sugars can burn quickly.
