Ingredients

Salmon Patties

  • pounds salmon, skin removed and cut into 1-inch pieces
  • 1 large egg, beaten
  • ⅓ cup panko breadcrumbs
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 teaspoons Old Bay seasoning
  • 1 tablespoon mustard powder
  • 1 tablespoon fresh lemon juice (from 1 lemon)
  • 2 to 3 tablespoons minced fresh chives
  • 2 tablespoons vegetable oil
  • 4 slices Havarti dill cheese

Old Bay Mayonnaise

  • ½ cup mayonnaise
  • 1 tablespoon minced chives
  • 2 teaspoons Old Bay seasoning
  • 2 teaspoons fresh lemon juice

For Assembling

  • 4 brioche buns, toasted
  • 1 cup caramelized onions
  • 1 avocado, sliced

Instructions

  1. Make the salmon mixture. Add the salmon to the base of a food processor and pulse 15 times until broken down into ⅛-inch pieces. Transfer ¾ of the shredded salmon to a large bowl. Pulse the remaining salmon in the processor until a paste forms, about 15 more times. Add the beaten egg to the salmon paste and pulse until just incorporated. Combine the salmon pieces, salmon paste, panko breadcrumbs, onion powder, garlic powder, Old Bay seasoning, mustard powder, lemon juice, and minced chives. Mix gently until all ingredients are evenly combined, ensuring not to overwork the mixture.
  2. Form the patties. Line a plate with parchment paper. Divide the salmon mixture evenly into 4 portions and carefully shape each portion into a round patty about ¾ inch thick, maintaining an even thickness to ensure uniform cooking.
  3. Cook the burgers. Heat the vegetable oil in a large skillet over medium heat. Once hot, place the salmon patties into the skillet and cook for about 3 minutes, or until the bottoms develop a golden brown crust. Carefully flip each patty, then immediately place a slice of Havarti dill cheese on top of each. Continue cooking for another 3 minutes, or until the patties are cooked through and the cheese melts.
  4. Make the Old Bay mayonnaise. While the patties cook, combine mayonnaise, minced chives, Old Bay seasoning, and lemon juice in a small bowl. Stir well until all ingredients are fully blended, making a flavorful spread to complement the salmon burgers.
  5. Assemble the burgers. Spread the prepared Old Bay mayonnaise on the cut sides of the toasted brioche buns. Place the cooked salmon patties cheese-side up on the bottom buns. Top each patty with a generous spoonful of caramelized onions and a few slices of avocado. Cover with the top buns and serve immediately for maximum flavor and freshness.
