Salted Nut Roll Bars are a delightful no-bake treat combining crunchy salted peanuts with a creamy peanut butter and marshmallow mixture, creating a perfect balance of sweet and salty flavors in a chewy, satisfying bar.

  • Total Time: 15 minutes
  • Yield: 24 servings

Ingredients

Ingredients

  • 16 ounces salted dry roasted peanuts
  • 1 can (14 ounces) sweetened condensed milk
  • 10 ounces Reese’s peanut butter baking chips
  • 3 tablespoons unsalted butter
  • 10 ounces mini marshmallows

Instructions

  1. Prepare the base: Spread half of the salted dry roasted peanuts evenly in the bottom of a 9″ x 13″ pan. Set aside to create the crunchy foundation for the bars.
  2. Make the peanut butter mixture: In a saucepan over low to medium-low heat, combine the sweetened condensed milk, peanut butter baking chips, and unsalted butter. Stir continuously to blend the ingredients. When the mixture is nearly combined, remove from heat and continue stirring off the heat until smooth to avoid scorching.
  3. Cool and combine with marshmallows: Allow the peanut butter mixture to cool until it is lightly warm but still stirrable. This cooling step prevents the mini marshmallows from melting. Then, gently fold in the mini marshmallows to evenly combine without crushing them.
  4. Assemble the layers: Spread the peanut butter and marshmallow mixture evenly over the peanuts in the pan.
  5. Add the topping: Sprinkle the remaining salted peanuts evenly on top of the peanut butter mixture, pressing them lightly into the surface with a spatula to create a firm top layer.
  6. Chill and cut: Let the bars cool to room temperature or refrigerate to set completely. Once set, cut into bars and serve. These bars can also be frozen for longer storage.
  7. Enjoy and share: If you love this recipe, please leave a star rating and comment to share your feedback.

Notes

  • Ensure the peanut butter mixture is not too hot when adding marshmallows to keep them intact and prevent melting.
  • Use salted dry roasted peanuts for the best balance of flavor and crunch.
  • These bars freeze well for up to 3 months; thaw at room temperature before serving.
  • You can substitute Reese’s peanut butter baking chips with your preferred peanut butter chips if desired.
  • Press the top layer of peanuts firmly with a spatula to help hold the bars together.
