Ingredients
Main Ingredients
- 6 tablespoons unsalted butter
- 10 ounces mini marshmallows
- 6 ounces dark chocolate, finely chopped
- 4 ounces milk chocolate, finely chopped
- 1 teaspoon vanilla extract
- 4 cups crisped rice cereal
- 1 ½ cups salted mini pretzel twists, some crushed, some whole
- 6 ounces mini marshmallows (for topping)
Instructions
- Prepare Baking Dish: Line an 8×8 inch baking dish with parchment paper to prevent sticking and allow easy removal of the bars once set.
- Melt Butter and Marshmallows: In a large microwave-safe bowl, combine butter and 10 ounces of mini marshmallows. Microwave in 30-second increments, stirring after each until melted and smooth.
- Add Chocolate and Vanilla: Stir in the finely chopped dark and milk chocolate until the mixture becomes smooth. If needed, microwave briefly again, stirring continuously to avoid the chocolate seizing. Mix in the vanilla extract thoroughly.
- Incorporate Cereal and Pretzels: Fold in the crisped rice cereal and salted mini pretzel twists using a large spatula, ensuring all pieces are evenly coated without crushing the cereal. This process is sticky and requires patience.
- Press and Chill: Transfer the mixture to the prepared baking dish, pressing it firmly and evening out the top with a spatula. Refrigerate the mixture for 2 to 4 hours to set completely.
- Top with Marshmallows and Broil: Once chilled, remove from the fridge and immediately cover the surface with 6 ounces of mini marshmallows. Place under a preheated broiler on high for 1 to 2 minutes, watching closely until the marshmallows become golden and bubbly.
- Cut and Serve: Remove from the oven and use a sharp knife to gently cut into squares while the marshmallows are still warm and gooey. Serve immediately for the best texture and flavor experience.
Notes
- Be sure to watch the marshmallows closely under the broiler as they can burn quickly.
- Using a sharp knife dipped in hot water will help make cleaner cuts through the gooey marshmallow topping.
- You can adjust the balance of dark and milk chocolate according to your preference for sweetness and richness.
- For a gluten-free version, substitute the pretzels and cereal with certified gluten-free options.
- Allow the bars to cool completely in the fridge before cutting to prevent crumbling.
