- 1 package Great Value Tomato Basil Soup
- 1.5 lbs whole boneless skinless chicken breast
- 2 tbsp olive oil
- 3 shallots, diced
- 12 oz roasted red peppers, jarred
- 3 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 lb mozzarella cheese
Instructions
- Boil the Soup: Boil the tomato basil soup in the bag according to package instructions, then set aside to be used in the sauce.
- Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the chicken later.
- Brown the Chicken: Spray a large cast iron skillet with non-stick spray and heat over medium-high heat. Add the chicken breasts and brown each side for about 3 minutes until nicely seared. Remove the chicken from the skillet and set aside.
- Sauté Aromatics: Add olive oil to the same skillet and warm over medium heat. Add diced shallots and cook for about 3 minutes until softened. Then add roasted red peppers, minced garlic, salt, and pepper, cooking another 3 minutes while stirring occasionally.
- Simmer Soup Sauce: Pour the prepared tomato basil soup into the skillet with the aromatics and cook over medium-high heat for 3 to 5 minutes until slightly thickened.
- Combine Chicken and Sauce: Return the browned chicken breasts to the skillet, spooning some sauce around and over them.
- Bake Chicken: Transfer the skillet into the preheated oven and bake the chicken for about 20 minutes, depending on their thickness.
- Add First Layer of Mozzarella: Carefully remove the skillet from the oven, spoon extra sauce over the chicken, and sprinkle two-thirds of the mozzarella cheese on top. Return the skillet to the oven and bake an additional 5 to 10 minutes.
- Add Remaining Mozzarella and Finish Baking: Sprinkle the rest of the mozzarella cheese on the chicken and bake for another 5 to 8 minutes. For a crispier top, broil on low for 3 minutes if desired.
- Serve and Enjoy: Remove from oven and spoon extra sauce over the chicken. Serve the saucy mozzarella chicken bake with a smile, optionally over cooked pasta or polenta.
