Instructions

  1. Make the Crust: In a medium bowl, combine all purpose flour, white whole wheat flour, and salt. Add the cold cubed butter and use a pastry cutter or fork to cut the butter into the flour until the mixture resembles pea-sized pieces. In a small bowl, whisk one egg with 2 tablespoons of cold water and pour it into the flour mixture. Stir with a fork until the dough begins to come together, adding up to 1-2 more tablespoons of cold water as needed. Shape into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes to chill.
  2. Prepare the Filling: Melt 6 tablespoons of unsalted butter in a sauté pan over medium heat. Allow it to sizzle, foam, and then turn golden brown with a nutty aroma. Remove from heat and stir in finely chopped sage. In a medium bowl, combine the pumpkin puree, browned butter with sage, one egg, and kosher salt, mixing until fully incorporated.
