A quick and delicious Sheet Pan Gnocchi recipe featuring tender potato gnocchi roasted alongside zucchini, red onion, and juicy cherry tomatoes, all seasoned with Italian herbs and garlic powder. Topped with grated Parmesan and fresh basil, this meal is perfect for a flavorful and effortless weeknight dinner.

  • Total Time: 40 minutes
  • Yield: 4 servings

Ingredients

Main Ingredients

  • 1 pound potato gnocchi (shelf-stable gnocchi recommended)
  • 2 medium zucchini (cut into ¾-inch thick half rounds)
  • 1 small red onion (sliced ½-inch thick)
  • 3 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper (to taste)
  • 1 ½ cups whole cherry or grape tomatoes
  • 1 tablespoon olive oil
  • Grated Parmesan cheese (to taste)
  • Thinly sliced fresh basil (for serving)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to get it ready for roasting the gnocchi and vegetables.
  2. Prepare Vegetables and Gnocchi: In a large mixing bowl, combine the potato gnocchi, sliced zucchini, and red onion. Drizzle with 3 tablespoons of olive oil, then sprinkle the Italian seasoning, garlic powder, salt, and pepper. Stir thoroughly to evenly coat all ingredients in oil and seasoning.
  3. First Bake: Spread the gnocchi and vegetable mixture evenly on a large rimmed baking sheet. Place in the oven and bake for 15 minutes.
  4. Add Tomatoes and Continue Baking: After 15 minutes, remove the pan and stir the gnocchi and vegetables. Add the whole cherry or grape tomatoes evenly to the pan. Return to the oven and bake for an additional 15 minutes, or until the gnocchi are tender and lightly browned and the vegetables are cooked through.
  5. Final Touches: Once out of the oven, drizzle the gnocchi and vegetables with 1 tablespoon of olive oil. Sprinkle grated Parmesan cheese generously on top, followed by thinly sliced fresh basil. Serve immediately to enjoy warm.

Notes

  • Using shelf-stable gnocchi is recommended to ensure they hold up well during roasting.
  • If you prefer, substitute zucchini with yellow squash or bell peppers for a different flavor.
  • Adjust the amount of garlic powder and Italian seasoning to suit your taste preference.
  • For a vegan version, omit Parmesan cheese or use a plant-based alternative.
  • Ensure the vegetables are cut evenly to allow for uniform cooking.
  • Using a rimmed baking sheet prevents any juices from spilling into the oven.
