Ingredients
For the Sheet Pan:
- 1.5 lbs chicken thighs, boneless and skinless
- 1 lb baby potatoes, halved
- 1 pint grape tomatoes
- 1 medium zucchini, chopped
- 1 small red onion, cut into thick slices
For the Marinade:
- 1/2 cup olive oil
- 3 tbsp lemon juice
- 4 small cloves garlic, minced
- 3 tsp Greek seasoning
- 2 tsp garlic powder
- 2 tsp dried parsley
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp red pepper flakes
Other Ingredients:
- ⅓ cup feta cheese, crumbled
- ¼ – ½ cup kalamata olives, optional
- Fresh parsley, chopped, for garnish
- Tzatziki, for serving
Instructions
- Preheat Oven and Prepare Marinade: Preheat your oven to 425°F (220°C). In a small bowl, whisk together the olive oil, lemon juice, minced garlic, Greek seasoning, garlic powder, dried parsley, paprika, salt, black pepper, and red pepper flakes until well combined.
- Toss Vegetables with Marinade: Place the halved baby potatoes, grape tomatoes, chopped zucchini, and thickly sliced red onion on a large sheet pan. Drizzle with half of the prepared olive oil marinade and toss thoroughly to coat all vegetables evenly. Spread them out in an even layer on the pan.
- Arrange Chicken and Coat: Lay the chicken thighs on top of the vegetables on the sheet pan. Brush the remaining marinade generously over the chicken thighs to fully coat them with the flavorful mixture.
- Bake the Sheet Pan Meal: Place the sheet pan in the center rack of the preheated oven. Bake for 30-35 minutes, halfway through tossing the vegetables gently to ensure even cooking. Bake until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender.
- Add Final Touches and Serve: Remove the sheet pan from the oven. Sprinkle crumbled feta cheese and kalamata olives (if using) over the top. Garnish with freshly chopped parsley. Serve warm accompanied by tzatziki sauce for a delicious Greek-inspired meal.
Notes
- Use a meat thermometer to ensure chicken thighs reach an internal temperature of 165°F for safe consumption.
- If kalamata olives are not preferred, they can be omitted without affecting the overall flavor significantly.
- Variations can include adding bell peppers or artichoke hearts for extra Mediterranean flavors.
- Tzatziki sauce is optional, but it adds a refreshing creaminess that complements the spices well.
- For a crispier skin, bone-in, skin-on thighs can be used instead, but cook time may need adjustment.
