Chicken

  • ½ cup pure maple syrup

  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon dried parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon ground cinnamon
  • 2 apples, sliced (skin on)
  • 1 cup organic chicken stock

Veggies

  • 1 lb baby or creamer potatoes, halved (skin on optional)
  • 2 cups baby Brussels sprouts, halved
  • Handful broccolini, stems trimmed (or broccoli florets or asparagus)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano

Maple Apple Glaze

  • 2 tablespoons unsalted butter
  • 1 cup pure maple syrup
  • ¼ cup apple cider (homemade or store-bought)
  • Cooked sliced apples (from roasted chicken pan)
  • 3 fresh thyme sprigs
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground allspice
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Marinate and Season the Chicken: Preheat your oven to 375°F and prepare a large baking sheet by lining with parchment paper or foil. In a large bowl, combine the half chickens with olive oil, maple syrup, sea salt, black pepper, smoked paprika, garlic powder, onion powder, dried parsley, thyme, oregano, basil, and ground cinnamon. Toss well to coat chicken evenly. Optionally, marinate in a sealed bag in the refrigerator for at least 3 hours or overnight for best results. Before cooking, let chicken sit at room temperature for 15-20 minutes.
  2. Bake the Chicken and Potatoes: Place the seasoned chickens side by side on the prepared baking sheet, leaving space between them. Add halved potatoes and sliced apples around the chicken. Pour the remaining maple syrup-olive oil marinade over everything and add the chicken stock around the ingredients. Bake for 35-40 minutes until chicken skin is golden and crispy and chicken is cooked through.
  3. Prepare the Maple Apple Glaze and Roast Remaining Veggies: Increase oven temperature to 400°F. Remove the sheet pan from oven. Scoop some cooked apples from the pan for the glaze. Add Brussels sprouts and broccolini into the pan between the chicken and potatoes. Drizzle with olive oil and season with salt, black pepper, smoked paprika, garlic powder, onion powder, and oregano. Coat veggies well.
  4. Make the Maple Apple Glaze: In a medium saucepan over medium-high heat, melt butter. Add maple syrup, apple cider, cooked apples, cinnamon, allspice, and fresh thyme sprigs. Stir in cornstarch mixed with water. Bring to a boil, then reduce heat and simmer for 1-2 minutes, stirring until glaze thickens and smoothens. Remove from heat.
  5. Glaze and Final Bake: Generously spoon the maple apple glaze over the chicken and veggies in the sheet pan. Reserve some glaze for garnish if desired. Bake for an additional 15 minutes until glaze caramelizes and vegetables are tender with slight char.
