Ingredients
Marinade Ingredients
- 2-3 Tablespoons Gochujang (or substitute sambal oelek)
- 2 Tablespoons Toasted Sesame Oil
- 2 Tablespoons Dark Brown Sugar (packed, or substitute coconut sugar)
- 2 Tablespoons Rice Vinegar
- 2 Tablespoons Low-Sodium Soy Sauce
- 3 Cloves Garlic (minced)
- 1 Tablespoon Fresh Ginger (grated)
- 1 Tablespoon Sesame Seeds
Main Ingredients
- 4 Salmon Filets, 6 Ounces each
- 10 Ounces Fresh Green Beans (stems trimmed)
Garnish
- 1/4 Cup Sliced Scallions
- 1/4 Cup Fresh Cilantro (chopped)
- Toasted Sesame Seeds
To Serve
- Coconut Rice (see page 217 in Monique’s cookbook, Ambitious Kitchen, for recipe)
Instructions
- Prepare Marinade: In a large bowl, whisk together gochujang, toasted sesame oil, dark brown sugar, rice vinegar, low-sodium soy sauce, minced garlic, grated fresh ginger, and sesame seeds until fully combined to create the marinade.
- Reserve Marinade: Set aside 1/4 cup of the marinade in a separate small bowl for brushing later.
- Prepare Green Beans: Wash and trim the stems off the green beans, then add them to the large bowl with the remaining marinade along with the salmon filets. Toss gently to coat everything well.
- Marinate Salmon and Green Beans: Allow the salmon and green beans to marinate together for 20 minutes to absorb the flavors.
- Preheat Oven: While marinating, preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper.
- Transfer to Baking Sheet: Place the salmon filets and marinated green beans on the prepared baking sheet, positioning the salmon skin-side down.
- Bake Salmon and Green Beans: Bake in the preheated oven for 10-12 minutes until the salmon is cooked through and the green beans are tender-crisp.
- Broil Salmon: Switch your oven to broil on high and broil the salmon for about 2 minutes, until the skin is crispy and slightly charred, keeping a close eye to prevent burning.
- Brush Reserved Marinade: Remove the sheet pan from the oven and immediately brush the reserved marinade over the salmon and green beans to add an extra layer of flavor.
- Garnish, Serve, and Enjoy: Garnish with chopped scallions, fresh cilantro, and additional toasted sesame seeds. Serve the salmon and green beans over prepared coconut rice for a delicious and complete meal.
Notes
- For a substitute to gochujang, sambal oelek works well and provides similar spicy heat.
- Adjust the amount of gochujang to suit your preferred spice level.
- If coconut rice is unavailable, jasmine rice cooked with a little coconut milk is a great alternative.
- Keep an eye while broiling to avoid burning the salmon skin; 2 minutes usually suffices.
- Marinating the salmon and green beans for 20 minutes enhances the flavor but avoid longer marination to prevent the fish from becoming too soft.
