Instructions

  1. Preheat the oven: Set your oven to broil and prepare a baking sheet by lightly oiling it or coating it with nonstick spray to prevent sticking.
  2. Parboil the potatoes: Bring a large pot of salted water to a boil and add the baby red potatoes. Cook them until they are partially tender but not fully cooked, about 12-15 minutes. Drain the potatoes thoroughly afterward.
  3. Prepare the veggies on the baking sheet: Spread the parboiled potatoes and broccoli florets evenly in a single layer on the prepared baking sheet.
