Ingredients
Steak and Marinade
- 1 lb beef sirloin steak, cut into 1.5″ to 2″ cubes
- ½ cup olive oil
- ¼ cup low-sodium soy sauce
- 1 tablespoon Worcestershire sauce
- 2 garlic cloves, smashed
- 2 teaspoons steak seasoning, divided
- 4 tablespoons butter, thinly sliced
- Chopped fresh parsley, optional
Vegetables
- 1 lb russet potatoes, cut into 1″ pieces
- 12 oz green beans, trimmed
- 1 ½ tablespoons olive oil
- ½ teaspoon steak seasoning
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C). Spray a sheet pan generously with non-stick cooking spray to prevent sticking and to facilitate a good sear on the meat and vegetables.
- Prepare the Steak Marinade: Place the cubed sirloin steak, ½ cup olive oil, soy sauce, Worcestershire sauce, and smashed garlic cloves into a gallon zip-lock bag. Seal the bag and massage the marinade into the steak pieces thoroughly. Let the steak marinate at room temperature while roasting the vegetables, or marinate up to 24 hours in the fridge for enhanced flavor. Bring steak to room temperature before cooking if chilled.
- Season the Vegetables: In a large bowl, combine the cut potatoes and trimmed green beans. Toss them with 1 ½ tablespoons olive oil and ½ teaspoon of steak seasoning until evenly coated. Spread the vegetables out in an even layer on the prepared sheet pan.
- Roast Vegetables: Place the sheet pan with the vegetables in the oven and roast for 20 minutes, allowing the potatoes to cook through and develop a crispy exterior while the green beans soften.
- Add Steak and Butter: Remove the pan from the oven carefully. Gently push the vegetables to the sides of the sheet pan, creating space in the center. Add the marinated steak bites (discarding any remaining marinade) to the center of the pan and sprinkle with the remaining 1 ½ teaspoons of steak seasoning. Lay slices of butter over the steak.
- Finish Roasting: Return the pan to the oven and roast for an additional 10 minutes, or until the steak reaches your desired doneness—135°F for medium-rare, 145°F for medium. The butter will melt and baste the steak and vegetables, adding rich flavor.
- Toss and Serve: Once cooked, remove the pan from the oven. Gently turn the steak and vegetables in the melted butter to coat everything evenly. Sprinkle with fresh chopped parsley if desired and serve immediately for a delicious, hearty meal.
Notes
- For best results, do not use parchment paper as direct contact with the sheet pan ensures better searing.
- Marinate steak up to 24 hours ahead for enhanced flavor, but always bring to room temperature before cooking.
- Use a meat thermometer to check steak doneness to avoid overcooking.
- If russet potatoes are unavailable, Yukon gold potatoes can be used as a substitute for similar texture.
- Leftovers can be refrigerated for up to 3 days and reheated in a skillet or oven to maintain texture.
