  • Total Time: 55 minutes
  • Yield: 4 servings

Ingredients

Sauce and Base

  • 1/4 cup unsalted butter
  • 1/2 cup chopped yellow onion
  • 1/2 cup chopped green bell pepper
  • Salt and pepper to taste
  • 4 tbsp chopped fresh parsley (divided)
  • 1 tsp garlic powder
  • 16 oz canned chopped tomatoes (undrained)
  • 1/2 cup chicken stock
  • 1 tbsp hot sauce
  • 1 tbsp cornstarch
  • 1 tbsp water (for mixing with cornstarch)

Shrimp

  • 2 lbs medium shrimp (peeled and deveined)

Serving

  • Steamed white rice (for serving)

Instructions

  1. Sauté vegetables: Add butter to a large skillet over medium heat. Add chopped yellow onion and green bell pepper along with salt and pepper. Cook until the vegetables are soft and tender, about 5-6 minutes, stirring occasionally to prevent burning.
  2. Add seasonings and liquids: Stir in 3 tablespoons of fresh parsley, garlic powder, canned chopped tomatoes (with their juice), chicken stock, and hot sauce. Mix well to combine all ingredients.
  3. Boil the sauce: Bring the mixture to a rolling boil over medium-high heat to blend the flavors and heat the sauce through.
  4. Thicken the sauce: In a small bowl, mix cornstarch with 1 tablespoon of water until smooth. Pour this slurry into the boiling sauce while stirring constantly. Allow the sauce to thicken, then reduce the heat to medium-low.
  5. Cook the shrimp: Season the peeled and deveined shrimp with salt and pepper. Add them to the thickened sauce and raise the heat back to medium. Stir gently and cover the skillet with a lid to help the shrimp cook evenly. Cook until the shrimp turn pink and are opaque, about 3-5 minutes.
  6. Finish and serve: Remove the skillet from heat. Sprinkle the remaining tablespoon of fresh parsley on top for garnish. Serve the shrimp creole hot over steamed white rice for a delicious meal.

Notes

  • Use fresh parsley for the best flavor and garnish.
  • Adjust the hot sauce amount to make the dish more or less spicy to taste.
  • Ensure shrimp are not overcooked to maintain their tenderness.
  • Can substitute chicken stock with vegetable broth for a different flavor profile.
  • Serve immediately for best texture and taste.
