Ingredients
Sauce and Base
- 1/4 cup unsalted butter
- 1/2 cup chopped yellow onion
- 1/2 cup chopped green bell pepper
- Salt and pepper to taste
- 4 tbsp chopped fresh parsley (divided)
- 1 tsp garlic powder
- 16 oz canned chopped tomatoes (undrained)
- 1/2 cup chicken stock
- 1 tbsp hot sauce
- 1 tbsp cornstarch
- 1 tbsp water (for mixing with cornstarch)
Shrimp
- 2 lbs medium shrimp (peeled and deveined)
Serving
- Steamed white rice (for serving)
Instructions
- Sauté vegetables: Add butter to a large skillet over medium heat. Add chopped yellow onion and green bell pepper along with salt and pepper. Cook until the vegetables are soft and tender, about 5-6 minutes, stirring occasionally to prevent burning.
- Add seasonings and liquids: Stir in 3 tablespoons of fresh parsley, garlic powder, canned chopped tomatoes (with their juice), chicken stock, and hot sauce. Mix well to combine all ingredients.
- Boil the sauce: Bring the mixture to a rolling boil over medium-high heat to blend the flavors and heat the sauce through.
- Thicken the sauce: In a small bowl, mix cornstarch with 1 tablespoon of water until smooth. Pour this slurry into the boiling sauce while stirring constantly. Allow the sauce to thicken, then reduce the heat to medium-low.
- Cook the shrimp: Season the peeled and deveined shrimp with salt and pepper. Add them to the thickened sauce and raise the heat back to medium. Stir gently and cover the skillet with a lid to help the shrimp cook evenly. Cook until the shrimp turn pink and are opaque, about 3-5 minutes.
- Finish and serve: Remove the skillet from heat. Sprinkle the remaining tablespoon of fresh parsley on top for garnish. Serve the shrimp creole hot over steamed white rice for a delicious meal.
