Ingredients
Shrimp and Vegetables
- 2 lbs Raw shrimp (peeled and deveined, tails off)
- 1/4 cup Finely chopped red onion
- 2 Celery stalks (finely chopped)
Dressing
- 1/2 cup Mayonnaise (can substitute with 1/2 cup Greek yogurt for a lighter option)
- 3 Tbsp Fresh lemon juice (from about 2 lemons)
- 2 tablespoons Chopped fresh dill
- 1 tablespoon Dijon mustard
- 1 teaspoon Minced garlic
- 1/2 teaspoon Fine sea salt
- 1/4 teaspoon Fresh ground black pepper
- 1/4 teaspoon Old Bay seasoning
Garnish
- Fresh chopped dill
Instructions
- Boil the shrimp. Fill a large pot with water and bring it to a boil. Once boiling, reduce heat to medium and add the peeled and deveined shrimp. Cook for 1-2 minutes until the shrimp turn pink and are just cooked through.
- Prepare the dressing. While waiting for the water to boil, mix mayonnaise, fresh lemon juice, chopped fresh dill, Dijon mustard, minced garlic, salt, black pepper, and Old Bay seasoning in a small bowl. Set aside to let the flavors meld.
- Make an ice bath. In a large bowl, add cold water along with several handfuls of ice cubes to create an ice bath. This will be used to stop the shrimp from cooking further.
- Cool the shrimp. Once cooked, immediately transfer the shrimp to the ice bath to halt the cooking process. Let them cool completely, then drain thoroughly.
- Combine ingredients. In a medium-sized bowl, mix the cooled shrimp with the finely chopped red onion, celery, and prepared dressing. Stir gently to evenly coat all ingredients with the dressing.
- Garnish and serve. Sprinkle fresh chopped dill on top as a garnish. Serve the shrimp salad chilled, either on lettuce leaves or on its own for a refreshing, light meal.
Notes
- To make the salad lighter and tangier, substitute mayonnaise with Greek yogurt for the dressing.
- Ensure shrimp are not overcooked; boiling for just 1-2 minutes keeps them tender and juicy.
- Old Bay seasoning adds a classic seafood flavor, but can be adjusted based on preference.
- Serve immediately or refrigerate for up to 24 hours for best freshness.
