Peas Preparation

Instructions
- Shell green peas (if fresh): If using fresh shelled green peas, shell them by removing peas from the pods and collect them in a bowl. If using frozen or canned peas, skip this step.
- Clean peas: Rinse the green peas with water mixed with vinegar to remove any tiny bugs or pesticides. Then strain thoroughly.
- Boil peas: Place the green peas in a small saucepan and cover them with water. Boil over medium heat with a lid for about 5 minutes or until peas are cooked through.
- Dice onion: While peas cook, peel and finely dice the onion. Set aside.
- Heat oil and butter: Warm a small skillet over low heat and add olive oil and butter. Allow the butter to melt slowly without browning.
- Sauté onion: Add the diced onion to the skillet and cook, stirring occasionally, until the onion is soft and translucent.
- Add peas and season: Stir in the cooked green peas, then season with salt and black pepper. Adjust salt depending on the saltiness of the butter used.
- Cook together: Increase heat to medium-high and cook the peas and onions together for about 2 minutes, stirring frequently to combine flavors.
- Garnish and serve: Turn off the heat, sprinkle freshly chopped parsley on top, and serve the buttered peas hot as a flavorful side dish.

- Using fresh peas is recommended for the best flavor, but frozen or canned peas work well too.
- Rinsing peas with vinegar helps remove any impurities or pesticide residues.
