This Simply Delicious Asian Chicken Salad is a quick, flavorful dish combining tender marinated chicken with crisp romaine, sweet mandarin oranges, crunchy chow mein noodles, and a tangy homemade dressing. Perfect for a light lunch or easy dinner, it offers a delightful mix of textures and Asian-inspired flavors in just 25 minutes.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

Marinade

  • 3 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1 pound (about 2 small) boneless skinless chicken breasts (pounded thin)

Salad

  • 1 large head romaine (chopped)
  • 1 11-ounce can mandarin oranges (drained)
  • 1 cup (2 oz) fried chow mein noodles

Dressing

  • 1/2 cup rice vinegar
  • 1/4 cup sugar
  • 2 tablespoons vegetable or canola oil
  • 1/2 teaspoon toasted sesame oil
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Marinade Preparation: Combine soy sauce, brown sugar, toasted sesame oil, ground ginger, and garlic powder in a large ziplock bag. Add the pounded chicken breasts to the bag, seal it, and shake to coat the chicken evenly. Let the chicken marinate at room temperature for 10 to 30 minutes to absorb the flavors.
  2. Dressing Preparation: While the chicken marinates, bring 1/2 cup rice vinegar to a boil in a small pot. Remove from heat and stir in 1/4 cup sugar until fully dissolved. Add vegetable or canola oil, toasted sesame oil, salt, and pepper to the vinegar mixture. Pour the dressing into a mason jar, seal it, and shake well to combine. Set aside to cool.
  3. Cooking the Chicken: Heat a large pan over medium-high heat and lightly grease with cooking spray. Remove the chicken from the marinade and place it in the pan. Cook for 5 to 8 minutes on each side, or until the internal temperature reaches 160°F on an instant-read thermometer. Transfer the cooked chicken to a cutting board and let it rest for at least 5 minutes before slicing into strips to retain juices.
  4. Assembling the Salad: Place chopped romaine in a serving bowl or individual plates. Layer the sliced chicken breast over the greens, then add drained mandarin oranges and fried chow mein noodles on top. Drizzle the cooled dressing over the salad just before serving for a delicious, fresh flavor combination.

Notes

  • For best results, pound the chicken breasts thin to ensure even cooking and quicker marination.
  • You can substitute mandarin oranges with canned pineapple chunks or fresh segmented oranges if preferred.
  • Use fresh ginger in place of ground ginger for a more vibrant flavor in the marinade.
  • The dressing can be made ahead and refrigerated for up to 3 days.
  • To keep the chow mein noodles crunchy, add them just before serving.
