Ingredients
For the Steak and Marinade
- 1 pound boneless beef skirt steak
- 1/3 cup olive oil
- 1 lime, juiced and zested
- 3 garlic cloves, 1 1/2 teaspoons minced
- 1 teaspoon Kosher salt
- 1 teaspoon ground cumin
- 1/2 teaspoon ground black pepper
For Serving
- 6 corn tortillas
- 3 tablespoons freshly chopped cilantro
- Optional toppings: diced tomatoes, diced avocado, chopped onions, cilantro lime crema (see notes)
Instructions
- Marinate the Steak: In a large bowl, combine olive oil, lime juice and zest, minced garlic, Kosher salt, ground cumin, and ground black pepper. Add the skirt steak and coat evenly with the marinade. Cover and marinate for at least 20 to 30 minutes at room temperature or up to 24 hours in the refrigerator. If refrigerated, bring the steak to room temperature by setting it out for 30 minutes before cooking.
- Grill the Steak: Preheat your grill to high heat. Using tongs, transfer the marinated skirt steak to the grill and cook for about 3 to 4 minutes per side, or until it reaches your desired level of doneness. Remove the steak from the grill and let it rest for 5 minutes to allow the juices to redistribute.
- Slice the Steak: After resting, slice the steak thinly against the grain to ensure tender bites.
- Prepare Taco Toppings: While the steak rests, prepare your desired toppings such as diced tomatoes, avocado, chopped onions, and freshly chopped cilantro. You can also prepare or use a cilantro lime crema for extra flavor.
- Warm the Tortillas and Assemble: Warm the corn tortillas on the grill or stovetop until pliable and slightly charred. Place slices of skirt steak on each tortilla, add your chosen toppings, drizzle with cilantro lime crema if desired, and serve immediately while warm.

- For the cilantro lime crema, blend sour cream with lime juice, zest, and chopped cilantro to taste.
- Allowing the steak to marinate longer (up to 24 hours) enhances flavor and tenderness.
- Letting the steak rest after grilling ensures juicier meat when sliced.
- Be sure to slice the steak against the grain for maximum tenderness.
- Warm the tortillas just before assembling to prevent them from drying out or cracking.
