- 1 small White Onion, diced
- 1 Tbsp Garlic, minced

- Salt and Pepper, to taste
- 1/4 cup Nutritional Yeast
- 1 1/2 cup Coconut Milk
- 1 1/2 cup Chicken Broth (more as needed)
Sloppy Joe Meat Mixture
- 1 Tbsp Extra Virgin Olive Oil
- 1 lb Ground Turkey
- 8 oz Noble Made Less-Sugar Sloppy Joseph Skillet Sauce
Topping
- 1/4 cup Gluten-free Pork Rind Breadcrumbs
Instructions
- Cook the pasta: Prepare the chickpea pasta according to the package instructions. While the pasta cooks, preheat the oven to 400°F (204°C).
- Brown the turkey: Heat 1 tablespoon of extra virgin olive oil in a pan over medium heat. Add 1 lb of ground turkey, season with salt and pepper, and cook until browned and cooked through.
- Simmer the Sloppy Joe sauce: Add 8 oz of Noble Made Less-Sugar Sloppy Joseph Skillet Sauce to the browned turkey. Stir to combine and let it simmer for 5 minutes for the flavors to meld.
- Sauté vegetables: In a large pot, combine cauliflower, frozen butternut squash, diced white onion, minced garlic, paprika, salt, and pepper. Sauté the mixture for about 5 minutes to soften the vegetables.
- Add liquids and nutritional yeast: Stir in nutritional yeast, chicken broth, and coconut milk. Continue sautéing for another 5 minutes or until the butternut squash is tender and cooked through.
- Blend the vegetable sauce: Using an immersion blender, blend the vegetable mixture until smooth and creamy, creating a luscious sauce base.
- Combine pasta and sauce: Drain the cooked noodles thoroughly and add them into the blended vegetable sauce. Stir well to coat the pasta evenly.
- Assemble the casserole: In a casserole pan, spread half of the mac and cheese as the base. Layer the Sloppy Joe meat mixture evenly on top, then cover with the remaining mac and cheese, smoothing out into a single layer.
- Add breadcrumb topping: Sprinkle a fine, even layer of gluten-free pork rind breadcrumbs over the top of the casserole for a crunchy texture after baking.
- Bake: Place the casserole pan in the preheated oven and bake for about 15 minutes or until the breadcrumbs turn golden brown and crispy.
