Meat
- 1 lb ground beef
Vegetables
- 1 onion, chopped
- 3 cups cabbage, chopped
- 1 cup green beans, cut in half
- 1 cup celery, chopped
- 1/2 bell pepper, chopped

Tomato & Broth
- 1 can (796 ml) diced tomatoes
- 1 can (156 ml) tomato paste
- 3/4 cup (about 180 ml) broth (vegetable, beef, or chicken)
Other
- 1 cup uncooked minute rice
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the beef: In a skillet, cook 1 lb of ground beef over medium heat until fully browned and cooked through. Drain any excess fat. Then transfer the cooked beef to the slow cooker.
- Add vegetables and liquids: To the slow cooker with the beef, add chopped onion, cabbage, green beans, celery, bell pepper, and minced garlic. Pour in the can of diced tomatoes along with their juice, the tomato paste, and the broth of your choice. Stir to combine all ingredients.
- Season and slow cook: Sprinkle in 1 teaspoon of Italian seasoning and season with salt and pepper to taste. Cover the slow cooker with the lid, set it to high, and cook for 4 hours (or on low for 7-8 hours) to allow all the flavors to meld and the vegetables to soften.
- Add the rice: Approximately 15-20 minutes before the end of cooking time, stir in 1 cup of uncooked minute rice into the soup. Let it cook uncovered, checking the rice after 10 minutes and then every few minutes until the rice reaches your desired tenderness.
- Serve and enjoy: Once the rice is cooked, give the soup a final stir and taste for seasoning. Adjust salt and pepper if needed, then ladle into bowls and enjoy your slow cooker cabbage roll soup hot.
Notes
- Minute rice is used in the last few minutes of cooking to prevent overcooking and becoming mushy. Regular rice should be pre-cooked or added earlier.
- You can substitute ground beef with ground turkey or chicken for a leaner option.
- Use any broth you prefer—vegetable, beef, or chicken broth all work well with this recipe.
- For a vegetarian version, omit the beef and use vegetable broth, adding a protein like beans or lentils if desired.
