Slow Cooker Hawaiian Shoyu Chicken is a flavorful and easy-to-make dish featuring tender chicken thighs simmered in a savory-sweet blend of soy sauce, brown sugar, garlic, and ginger. This recipe allows for effortless cooking with minimal prep, making it perfect for a satisfying weeknight meal or a casual gathering. The chicken is cooked low and slow to perfection, absorbing the rich Hawaiian-inspired sauce, and is garnished with fresh green onions and toasted sesame seeds for an added burst of flavor and texture.

  • Total Time: 3 hours 10 minutes
  • Yield: 6 servings

Ingredients

Chicken and Marinade

  • 2 pounds boneless skinless chicken thighs
  • 1 cup low-sodium soy sauce
  • 1 cup brown sugar
  • 1 cup water
  • 4 cloves garlic, peeled
  • 1-inch piece fresh ginger, peeled
  • 1/4 cup green onions, diced
  • 1/2 teaspoon black pepper

To Garnish

  • Toasted sesame seeds
  • Additional fresh green onions, sliced

Optional Thickener

  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Instructions

  1. Prepare the sauce and chicken: In the slow cooker, combine soy sauce, brown sugar, water, whole garlic cloves, peeled ginger, diced green onions, and black pepper. Stir the mixture well to dissolve the sugar and blend the flavors.
  2. Add chicken thighs: Place the boneless skinless chicken thighs into the slow cooker, submerging them in the marinade. Cover the slow cooker with its lid.
  3. Cook the chicken: Set the slow cooker to HIGH and cook for 2 to 3 hours, or set to LOW and cook for 4 to 5 hours. Cook until chicken thighs reach an internal temperature between 175℉ and 195℉, ensuring they are tender and fully cooked. Note that cooking times may vary depending on the slow cooker model.
  4. (Optional) Thicken the sauce: About 30 minutes before the end of cooking, if a thicker sauce is desired, whisk together the cornstarch and cold water until smooth. Stir this mixture into the slow cooker. Keep the lid on. If cooking on LOW, increase the heat to HIGH to assist in thickening the sauce during this final period.
  5. Serve the chicken: Either serve the chicken thighs whole or shred them using forks, mixing back into the sauce. Garnish with fresh sliced green onions and toasted sesame seeds for added flavor and texture.

Notes

  • Cooking times vary by slow cooker; newer models may cook faster.
  • Chicken can be served whole or shredded according to preference.
  • The sauce can be thickened with cornstarch slurry for a richer consistency.
  • Use low-sodium soy sauce to balance the saltiness.
  • Ginger and garlic may be left whole or finely chopped for stronger flavor.
