  • Total Time: 4 hours 10 minutes
  • Yield: 8 servings

Ingredients

Chicken and Seasonings

  • 2 1/2 pounds boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon sea salt
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 2 teaspoons Worcestershire sauce

Pimento Cheese Mixture

  • 1 (4 ounce) jar diced pimentos, drained
  • 8 ounces full fat cream cheese
  • 1 (8 ounce) bag shredded cheddar cheese (or shred your own)
  • Hot sauce or pickle juice (optional, to taste)

Sandwich Assembly

  • Bread: hamburger buns, Texas toast, Hawaiian rolls, slider buns, or ciabatta rolls
  • Mayo (to taste)
  • Pickled red onions
  • Optional toppings: sliced tomato, bacon, lettuce, pickles

Instructions

  1. Prepare the Chicken: Place the boneless, skinless chicken breasts in the slow cooker. Season them evenly with garlic powder, onion powder, sea salt, cayenne pepper, and black pepper. Pour in the Worcestershire sauce, add the drained diced pimentos, and place the cream cheese on top. Cover and cook on low for 4 hours, or until the chicken reaches an internal temperature of 165°F.
  2. Shred and Combine: Once cooked, leave the liquid in the slow cooker as the shredded chicken will absorb it and become more flavorful. Using two forks, shred the chicken directly in the slow cooker. Stir the mixture thoroughly to fully combine with the cream cheese. Then, add the shredded cheddar cheese and stir until it melts and blends evenly with the rest of the ingredients. Optionally, add hot sauce or pickle juice to taste for extra tang or heat.
  3. Assemble the Sandwiches: Spread mayo onto your choice of bread—hamburger buns, Texas toast, Hawaiian rolls, slider buns, or ciabatta rolls. Add a generous amount of the pimento cheese chicken filling. Top with pickled red onions and, if desired, additional toppings such as sliced tomato, bacon, lettuce, or pickles. Serve warm and enjoy!

Notes

  • You can adjust the cayenne pepper to control the heat level of the chicken.
  • Using full-fat cream cheese and cheddar gives the best creamy texture but you can use reduced-fat versions if desired.
  • Optional hot sauce or pickle juice adds a nice tangy or spicy kick to the chicken mixture.
  • Leftover chicken filling can be refrigerated and used within 3 days or frozen for longer storage.
  • Try different types of bread to change up the sandwich experience.
