Ingredients
Meat and Coating
- ¼ cup all-purpose flour
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ¼ teaspoon paprika
- 1 ½ – 2 pounds cube steak
For Browning
- 3 tablespoons vegetable oil or butter
Vegetables
- 3 stalks of celery, chopped
- 1 onion, chopped
- 3 carrots, chopped
- 2 garlic cloves, minced
Sauce
- 2 (14.5 ounce) cans stewed tomatoes with juice
- 2 tablespoons brown sugar (or to taste)
- 2 tablespoons Worcestershire sauce
- 1 brown gravy packet
Instructions
- Prepare the seasoned flour mixture: In a shallow dish, combine the flour, onion powder, garlic powder, salt, pepper, and paprika. Whisk these ingredients together thoroughly to ensure an even coating for the steaks.
- Dredge the cube steaks: Lightly coat each cube steak in the seasoned flour mixture, shaking off any excess. Set the coated steaks aside while preparing for browning.
- Brown the steaks: Heat vegetable oil or butter in a large skillet over medium-high heat. Once hot, add the steaks to the pan and quickly brown each side just to develop a light crust and add flavor—do not cook through at this stage.
- Transfer to slow cooker: Place the browned steaks into the slow cooker, arranging them evenly as the base layer.
- Add vegetables: Layer the chopped carrots, celery, and onion on top of the steaks in the slow cooker, spreading them out evenly for balanced cooking.
- Prepare the sauce: In a small bowl, whisk together the minced garlic, brown sugar, stewed tomatoes with their juice, Worcestershire sauce, and the brown gravy packet until well combined.
- Pour sauce into slow cooker: Carefully pour the tomato sauce mixture over the steaks and vegetables, ensuring everything is coated and submerged as much as possible.
- Cook low and slow: Cover the slow cooker and cook on low heat for 6 to 8 hours, or alternatively on high for 4 to 6 hours. Cook until the meat is tender and the vegetables are soft and flavorful.
- Serve: Once cooked, serve the Swiss steak hot with your choice of sides such as mashed potatoes or rice to enjoy the rich, hearty sauce.
Notes
- You can use vegetable oil or butter for browning depending on your preference; butter adds richness while oil handles higher heat better.
- Adjust brown sugar to taste depending on how sweet you prefer your sauce.
- For thicker gravy, you can add a slurry of cornstarch and water during the last hour of cooking if desired.
- This dish pairs wonderfully with mashed potatoes, rice, or buttered noodles to soak up the delicious sauce.
- Cube steak is ideal for this recipe due to its tenderness when slow-cooked. Avoid substituting with thicker cuts unless adjusted for longer cooking time.
