Instructions
- Prepare toppings: Prepare any additional toppings you desire so they are ready to serve alongside the tacos when finished. Store toppings in the refrigerator if needed.
- Preheat griddle: Preheat a Blackstone griddle or similar flat-top griddle to medium-high heat for cooking.
- Shape sausage on tortillas: Divide the ground sausage into four equal portions. Spread each portion evenly and thinly over one side of each soft tortilla, covering the entire surface.
- Melt butter and cook tacos: Add half of the butter onto the cooking surface and spread it around with the back of a spatula. Place the tortillas with the sausage side down onto the hot griddle.
- Cook and flip tacos: Cook the tortillas for 3-4 minutes until the sausage starts to crisp on the bottom, then carefully flip each taco over. Top the cooked side with shredded cheddar cheese and cook for an additional 3 minutes or until the sausage is cooked through to an internal temperature of 165°F.
- Remove cooked tacos: Once cooked, remove the sausage-topped tortillas from the griddle and set them aside.
- Cook eggs: Melt the remaining butter on the griddle. Crack the eggs directly onto the cooking surface and cook them to your preferred doneness; sunny side up is recommended.
- Assemble tacos: Place each cooked egg on top of a sausage and cheese tortilla, then fold the taco in half.
- Serve: Serve the assembled breakfast tacos immediately and enjoy a delicious, hearty breakfast.
