Instructions
- Prepare Burger Sauce: In a bowl, combine mayonnaise, pickle relish, Dijon mustard, granulated sugar, white distilled vinegar, paprika, onion powder, and garlic powder. Whisk everything together until the sauce is smooth and well blended. Refrigerate the sauce until you are ready to assemble the tacos.
- Divide Beef: Portion the lean ground beef into 4 equal parts. Make sure the sections are even for consistent cooking.
- Form Beef on Tortilla: Spread each beef portion evenly across the surface of a 6-inch flour tortilla, making sure to cover most of the tortilla thinly.
- Season: Sprinkle salt and pepper evenly over the beef spread on each tortilla to enhance the flavor.
- Heat Pan: Place a griddle pan or skillet over medium-high heat and add the neutral oil. Allow the pan to heat until the oil is shimmering but not smoking.
- Cook Beef side down: Carefully place each tortilla with the beef side down on the hot pan. Press lightly with a spatula to ensure good contact between the beef and the pan.
- Brown the Beef: Cook for 2-3 minutes or until the beef has developed a nice browned crust and is mostly cooked through.
- Flip and Cheese: Flip the tortilla so the beef side is up. Immediately top the beef with a slice of American cheese.
- Melt Cheese and Crisp Tortilla: Continue cooking for 1-3 minutes more, until the cheese melts thoroughly and the underside of the tortilla crisps up slightly.
- Assemble: Remove the taco from the pan. Spread a generous amount of the prepared burger sauce on top, then add shredded iceberg lettuce, diced onions, and dill pickle chips for crunch and tang.
- Serve: Serve the smash burger tacos immediately to enjoy the contrast of crispy, juicy, and fresh elements all in one bite.
