Instructions
- Prepare the Dressing: Add the olive oil, honey, rice vinegar, lemon juice, Dijon mustard, garlic, kosher salt, and ground black pepper to a small blender. Blend until smooth. Taste and adjust seasoning if needed, then set aside.
- Cut and Smash Cucumbers: Slice the Persian cucumbers into 1-inch coins. Using the palm of your hand or the bottom of a cup, gently smash each cucumber coin until it cracks and flattens slightly to enhance texture and flavor absorption.
- Drain Excess Moisture: Place the smashed cucumber slices on a paper towel and press gently to remove as much excess moisture as possible. This prevents the salad from becoming watery, especially if not served immediately.
- Combine Salad Ingredients: Transfer the smashed cucumbers to a large mixing bowl. Add the diced avocado, finely sliced green onions, crumbled feta cheese, chopped fresh dill, and chopped fresh chives.
- Toss with Dressing: Pour the prepared dressing over the salad ingredients and gently toss everything together to combine evenly.
- Serve: Serve the salad right away for the best texture and crunch. Enjoy as a refreshing side or light meal.
