Smoked Mississippi Chicken is a flavorful and juicy smoked chicken breast recipe cooked low and slow on a smoker or BBQ. It uses ranch dressing and au jus gravy mixes along with pepperoncini and butter to create a richly seasoned and tender chicken dish perfect for a smoky meal.

  • Total Time: 1 hour 40 minutes
  • Yield: 4 servings

Ingredients

Chicken

  • 3 large boneless skinless chicken breasts (about pounds)

Seasoning Mixes

  • 1 envelope ranch dressing mix (1 ounce or about 2 tablespoons)
  • 1 envelope au jus gravy mix (1 ounce)

Additional Ingredients

  • 6 pepperoncini
  • ½ cup salted butter (cut into pieces)

Instructions

  1. Preheat the smoker or BBQ: Preheat your BBQ or smoker to 250°F. If you are using a BBQ grill, set it up for indirect cooking to ensure gentle, even heat.
  2. Prepare the chicken: Remove the chicken breasts from the packaging, pat them dry with paper towels, and trim off any excess fat to prevent flare-ups and ensure even cooking.
  3. Place chicken in skillet: Arrange the chicken breasts in a large skillet that can withstand the smoker or grill heat.
  4. Poke chicken breasts: Using a fork, poke each chicken breast 3 to 4 times to allow the seasoning to penetrate more deeply and help develop flavor during cooking.
  5. Add seasoning: Evenly sprinkle the ranch dressing mix and au jus gravy mix over the chicken breasts, ensuring all pieces get good coverage.
  6. Add pepperoncini and butter: Arrange the 6 pepperoncini peppers evenly over the chicken breasts and place the pieces of salted butter on top for moisture and richness.
  7. Smoke the chicken: Place the skillet with the chicken on the smoker and let cook for 60 minutes at 250°F.
  8. Check doneness and continue cooking: Use a meat thermometer to check the internal temperature of the thickest part of the chicken. Continue cooking until it reaches 165°F, which may take about 30 minutes more. Very large chicken breasts may require additional time.
  9. Serve: Remove the chicken from the smoker and serve immediately, optionally spooning some of the flavorful cooking juices from the skillet over the chicken.

Notes

  • Use a reliable meat thermometer to ensure the chicken is fully cooked but not dry.
  • If you don’t have a smoker, a BBQ set up for indirect heat works well.
  • Adjust smoking time depending on the size of your chicken breasts.
  • Leftovers can be refrigerated and reheated; cooking juices make a great sauce for added flavor.
