Ingredients
Seasoning
- 2 Tbsp everything bagel seasoning blend
Roll-Ups
- 1 lb smoked salmon, thinly sliced
- ¾ cup whipped cream cheese (or room temperature regular cream cheese)
- 2 scallions, thinly sliced (can substitute with chives)
- 2 tsp fresh lemon zest (from 1 medium lemon)
- 1 medium ripe avocado, peeled and cut into ¼-inch thick strips
- 1 small cucumber, cut into ¼-inch thick matchsticks
- 1 medium jalapeño pepper, very thinly sliced
- Low-sodium soy sauce, optional for serving
Instructions
- Prepare the salmon. Lay out a large sheet of plastic wrap about 20 inches long. Evenly sprinkle 2 tablespoons of everything bagel seasoning blend over the plastic wrap. Arrange the 1 pound of thinly sliced smoked salmon on top, overlapping the pieces to form a rectangle roughly 18 by 6 inches.
- Make the cream cheese filling. In a small bowl, combine ¾ cup whipped cream cheese with the 2 thinly sliced scallions and 2 teaspoons of fresh lemon zest. Stir until the mixture is evenly blended and smooth.
- Assemble, then roll. Using a spatula or spoon, spread the cream cheese mixture evenly over the entire surface of the salmon rectangle. About 2 inches from the bottom edge, lay out the avocado strips and cucumber matchsticks across the entire length of the salmon.
- Roll into a log. Use the plastic wrap to lift and carefully roll the salmon slices over the filling, forming a tight log. Optionally, sprinkle additional everything bagel seasoning on top for extra flavor and crunch.
- Cut, then serve. Using a sharp knife, slice the log into bite-sized pieces approximately ¾ inch thick. Arrange the pieces standing upright on a serving plate. Top each roll with a thin slice of jalapeño. Serve with low-sodium soy sauce on the side for dipping, if desired.
Notes
- You can substitute scallions with fresh chives if preferred.
- Use whipped cream cheese for easier spreading, or soften regular cream cheese to room temperature.
- Adjust the jalapeño quantity to control the spice level or omit if preferred.
- Serve immediately for the freshest texture, or cover and refrigerate for up to 2 hours before serving.
- Low-sodium soy sauce is optional but adds a nice umami balance when dipping.
