Delicious S’mores Cinnamon Rolls combine the classic flavors of cinnamon rolls with the nostalgic taste of s’mores. Soft, fluffy rolls filled with a rich cocoa and brown sugar mixture, studded with chocolate chips, baked to golden perfection, then topped with toasted marshmallow fluff. Perfect for a cozy dessert or special breakfast treat.

  • Total Time: 2 hours 10 minutes
  • Yield: 9 servings

Ingredients

Dough Ingredients

  • 2 ¾ cups all-purpose flour
  • 2 teaspoons cinnamon
  • ½ teaspoon salt
  • ¾ cup whole milk
  • 3 tablespoons unsalted butter
  • 2 ¼ teaspoons instant yeast (one standard packet)
  • 3 tablespoons honey
  • 1 large egg (room temperature)

Filling Ingredients

  • ¼ cup unsalted butter (room temperature)
  • ½ cup brown sugar
  • 2 tablespoons cocoa powder
  • ½ cup semi-sweet chocolate chips

Topping

  • 7 ounces marshmallow fluff
  • Optional: graham cracker crumbs or chocolate syrup for topping

Instructions

  1. Prepare Dough: Lightly grease a 9×9 inch square baking dish or 9-10 inch round cake or pie pan and set aside. In a large bowl, whisk together the flour, cinnamon, and salt. In a microwave-safe bowl, heat the milk and butter in 20-second increments until butter melts and mixture is warm (about 110°F). Whisk in the yeast until dissolved, then pour into dry ingredients. Add honey and egg, stirring with a wooden spoon until a soft dough forms.
  2. Knead the Dough: Turn the dough onto a lightly floured surface and knead for 3-5 minutes until smooth and not sticky. Transfer the dough to a lightly greased bowl, cover lightly, and let rise for 10 minutes.
  3. Prepare Filling: Roll the dough into a 14×9 inch rectangle on a floured surface. In a small bowl, mix softened butter, brown sugar, and cocoa powder into a thick paste. Spread this evenly over the dough, then sprinkle chocolate chips evenly on top.
  4. Shape Rolls: Starting at the long side, roll the dough into a log. Slice into 9 even rolls using a serrated knife. Place the rolls into the prepared baking dish.
  5. Second Rise: Lightly cover the rolls and let them rise at room temperature for 60-90 minutes, or until doubled in size.
  6. Bake Rolls: Preheat oven to 350°F. Bake the rolls uncovered for 26-29 minutes until golden brown and internal temperature reaches 195-200°F. Tent with foil if browning too fast.
  7. Toast Topping: Spread marshmallow fluff over the warm rolls. Return to oven and broil for 1-2 minutes until marshmallow is toasted, watching carefully to prevent burning. Alternatively, use a kitchen torch to toast the fluff.
  8. Serve: Optionally sprinkle with graham cracker crumbs or drizzle with chocolate syrup before serving warm.

Notes

  • Make sure the milk mixture is warm—about 110°F—to properly activate the yeast without killing it.
  • Knead the dough until smooth but do not over-knead to keep rolls tender.
  • If the rolls brown too quickly in the oven, tent loosely with foil to prevent burning.
  • Watch the marshmallow fluff closely while broiling; it toasts quickly and can burn.
  • For a more authentic s’mores flavor, add crushed graham crackers as a topping before serving.
