Instructions
- Prepare Dough: Lightly grease a 9×9 inch square baking dish or 9-10 inch round cake or pie pan and set aside. In a large bowl, whisk together the flour, cinnamon, and salt. In a microwave-safe bowl, heat the milk and butter in 20-second increments until butter melts and mixture is warm (about 110°F). Whisk in the yeast until dissolved, then pour into dry ingredients. Add honey and egg, stirring with a wooden spoon until a soft dough forms.
- Knead the Dough: Turn the dough onto a lightly floured surface and knead for 3-5 minutes until smooth and not sticky. Transfer the dough to a lightly greased bowl, cover lightly, and let rise for 10 minutes.
- Prepare Filling: Roll the dough into a 14×9 inch rectangle on a floured surface. In a small bowl, mix softened butter, brown sugar, and cocoa powder into a thick paste. Spread this evenly over the dough, then sprinkle chocolate chips evenly on top.
- Shape Rolls: Starting at the long side, roll the dough into a log. Slice into 9 even rolls using a serrated knife. Place the rolls into the prepared baking dish.
- Second Rise: Lightly cover the rolls and let them rise at room temperature for 60-90 minutes, or until doubled in size.
- Bake Rolls: Preheat oven to 350°F. Bake the rolls uncovered for 26-29 minutes until golden brown and internal temperature reaches 195-200°F. Tent with foil if browning too fast.
- Toast Topping: Spread marshmallow fluff over the warm rolls. Return to oven and broil for 1-2 minutes until marshmallow is toasted, watching carefully to prevent burning. Alternatively, use a kitchen torch to toast the fluff.
- Serve: Optionally sprinkle with graham cracker crumbs or drizzle with chocolate syrup before serving warm.

- Make sure the milk mixture is warm—about 110°F—to properly activate the yeast without killing it.
- Knead the dough until smooth but do not over-knead to keep rolls tender.
- If the rolls brown too quickly in the oven, tent loosely with foil to prevent burning.
- Watch the marshmallow fluff closely while broiling; it toasts quickly and can burn.
- For a more authentic s’mores flavor, add crushed graham crackers as a topping before serving.
