Southwest Pineapple Salsa
- 1.5 cups fresh pineapple, finely diced
- 1/2 red bell pepper, finely diced
- 1/2 green bell pepper, finely diced
- 1 jalapeno pepper, ribs and seeds removed (optional), finely diced
- 1/4 cup red onion, finely diced
- 1/4 cup cilantro, finely chopped
- 1 tbsp lime juice
- 1/8 tsp salt
Instructions
- Season the chicken: Combine the chicken breasts with garlic powder, onion powder, ground cumin, salt, the juice of one lime, and 1 tablespoon of vegetable oil. Mix thoroughly to ensure the chicken is evenly coated. Set aside to marinate briefly while preparing the salsa.
- Prepare the pineapple salsa: Finely dice the fresh pineapple, red bell pepper, green bell pepper, jalapeno (optional), red onion, and chop the cilantro. In a medium bowl, mix all these ingredients together along with 1 tablespoon of lime juice and 1/8 teaspoon salt until well combined. Refrigerate the salsa until ready to serve for best flavor.
- Cook the chicken: Heat the remaining 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the marinated chicken filets, making sure they have enough space and are not crowded. Cook each side for 3-4 minutes, or until the chicken reaches an internal temperature of 165°F, indicating it is fully cooked through. You can cook the chicken in batches if necessary to avoid overcrowding the pan.
- Serve: Plate the cooked chicken breasts and top each portion with a generous scoop of the prepared pineapple salsa for a fresh, vibrant finish.
Notes
- Adjust the jalapeno pepper quantity based on your preferred spice level; omit entirely if you desire no heat.
- Ensure the chicken is not overcrowded in the skillet to achieve a good sear and even cooking.
