Ingredients
For the Chicken Patties
- 2 lbs ground chicken
- 1/2 cup onion, grated
- 4 garlic cloves, minced
- 2 teaspoons smoked paprika
- 1/2 cup cilantro, chopped
- Liberal grinding of salt and pepper
For the Chipotle Mayonnaise
- 1/2 cup mayonnaise
- 1 chipotle pepper in adobo sauce
- 1 teaspoon adobo sauce
- 2 tablespoons lime juice
- 1 tablespoon chopped cilantro
For the Smashed Avocado Topping
- 1 jalapeño, seeded and chopped
- 2 tablespoons red onion, chopped
- 2 tablespoons lime juice
- 2 avocados, peeled and coarsely smashed
- 1 tablespoon cilantro, chopped
Instructions
- Prepare the Chicken Mixture: Combine the ground chicken, grated onion, minced garlic, smoked paprika, chopped cilantro, salt, and pepper in a large bowl. Mix gently to combine all ingredients evenly without overmixing, which can make the patties tough.
- Form Patties: Shape the mixture into 6 evenly sized patties. Place them on a tray and refrigerate for at least 15 minutes. This step helps the patties hold together better during cooking.
- Cook the Patties: Heat a grill or skillet over medium-high heat. Cook the chicken patties for 4-5 minutes on each side, or until fully cooked through and nicely browned on the outside.
- Make the Chipotle Mayonnaise: In a food processor, blend the mayonnaise, chipotle pepper, adobo sauce, lime juice, and chopped cilantro until smooth. Refrigerate the sauce until ready to serve to allow flavors to meld.
- Prepare the Smashed Avocado Topping: Combine the chopped jalapeño, red onion, and lime juice in a small bowl and let sit for a couple of minutes to soften their sharpness. Add the peeled avocados and coarsely mash them together with the jalapeño mixture. Stir in chopped cilantro for freshness.
- Assemble the Burgers: Place the cooked chicken patty on the bottom half of a burger bun. Top with a generous spoonful of the smashed avocado mixture. Spread chipotle mayonnaise on the inside of the top bun and place it over the avocado topping. Serve immediately.
Notes
- Refrigerating the patties before grilling prevents them from falling apart and helps retain moisture.
- Adjust the amount of chipotle pepper and jalapeño according to your preferred spice level.
- Make sure to not overmix the chicken mixture to keep the patties tender.
- Use ripe avocados for a creamy texture in the smashed avocado topping.
