Ingredients

For the Chicken Patties

  • 2 avocados, peeled and coarsely smashed

Instructions

  1. Prepare the Chicken Mixture: Combine the ground chicken, grated onion, minced garlic, smoked paprika, chopped cilantro, salt, and pepper in a large bowl. Mix gently to combine all ingredients evenly without overmixing, which can make the patties tough.
  2. Form Patties: Shape the mixture into 6 evenly sized patties. Place them on a tray and refrigerate for at least 15 minutes. This step helps the patties hold together better during cooking.
  3. Cook the Patties: Heat a grill or skillet over medium-high heat. Cook the chicken patties for 4-5 minutes on each side, or until fully cooked through and nicely browned on the outside.
  4. Make the Chipotle Mayonnaise: In a food processor, blend the mayonnaise, chipotle pepper, adobo sauce, lime juice, and chopped cilantro until smooth. Refrigerate the sauce until ready to serve to allow flavors to meld.
