Crust and Topping:

Filling:
- 2 large eggs

Instructions
- Prepare Crust and Topping: Preheat your oven to 350°F (175°C). Grease a 7×11 inch (2 quart) glass baking dish to prevent sticking.
- Make Crust Mixture: In a large bowl, combine the flour, sugar, salt, and chilled cubed butter. Use a dough blender or pastry cutter to mix until the mixture reaches a crumbly consistency resembling coarse sand.
- Divide Crust Mixture: Reserve 3/4 cup of the crumbly mixture for the topping. Press the remaining mixture evenly into the bottom of the prepared baking dish to form the crust layer.
- Bake Crust: Bake the crust in the preheated oven for 15 minutes. Remove from the oven and set aside to cool slightly while preparing the filling.
- Prepare Filling: In a large bowl, whisk the eggs until smooth. Add sugar, sour cream, flour, and a pinch of salt; whisk until the mixture is fully combined and smooth.
- Add Strawberries: Gently fold the fresh diced strawberries into the filling mixture, ensuring they are evenly distributed.
- Assemble Bars: Spoon the strawberry filling evenly over the baked crust in the baking dish. Then, sprinkle the reserved crumb topping evenly over the filling layer to cover it.
- Bake Bars: Bake in the oven for 45 to 55 minutes, or until the topping turns lightly golden brown and the filling is set (not jiggly).
- Cool and Serve: Remove the bars from the oven and allow them to cool completely for about one hour. Once cooled, cut into 12 bars and serve.
