Instructions
- Prepare the Strawberries: Rinse, hull, and dice 2½ cups of strawberries. Toss them with 1 to 2 tablespoons of honey and ½ teaspoon grated lemon zest (optional) to enhance the flavor. Let this mixture sit for about 10 minutes to macerate and release juices.
- Mix the Oats: In a medium bowl, whisk together 1 cup Greek yogurt, 1 cup milk, 2 tablespoons honey, and 1½ teaspoons vanilla extract until smooth. Stir in 1 cup rolled oats, then gently fold in half of the prepared strawberries along with all their juices. Cover the bowl and refrigerate overnight or for a minimum of 4 hours to allow the oats to soak and soften.
- Assemble the Overnight Oats: When ready to serve, stir the oat mixture, adding a splash of milk if it seems too thick. In serving glasses or bowls, layer the crushed graham crackers, reserved strawberries, then the oat mixture. Repeat with more strawberries and graham cracker crumbs, finishing with toasted slivered almonds on top. To toast the almonds, heat them in a dry skillet over medium heat for 2 to 3 minutes until golden and fragrant. Serve immediately, optionally drizzled with extra honey for added sweetness.
