Ingredients
Gnocchi
- 1 pound gnocchi
Vegetables and Herbs
- 3 cups mixed veggies, cut into bite-sized pieces (1 cup diced zucchini, 1 cup sweet corn kernels, 1 cup halved cherry tomatoes)
- 1 clove garlic, minced
- 1 small shallot, diced (about 1/3 cup)
- 1/4 packed cup fresh herbs, sliced (basil recommended)
Other Ingredients
- 2 tablespoons butter
- 1/2 cup water
- 1/2 of a large lemon (juice only)
- Salt and pepper to taste
Instructions
- Cook Gnocchi: Prepare the gnocchi according to the package directions, usually boiling until they float to the surface. Drain thoroughly and set aside.
- Sauté Aromatics: Melt butter in a large skillet over medium heat. Add minced garlic and diced shallot, cooking while stirring occasionally for 2-3 minutes until the shallot begins to soften and become fragrant.
- Cook Vegetables: Add the bite-sized mixed vegetables along with a pinch of salt to the skillet. Spread them into an even layer and cook without stirring much for 4 to 8 minutes until the veggies develop a light brown color, enhancing their flavor.
- Simmer with Water: Pour in 1/2 cup water and bring the mixture to a simmer. Cook while stirring occasionally until the water reduces by half, which helps meld the flavors and slightly steam the vegetables.
- Combine Gnocchi and Season: Add the cooked gnocchi back into the skillet along with salt and pepper. Stir gently to combine evenly. Taste and adjust seasoning if necessary.
- Finish with Herbs and Lemon: At the end of cooking, stir in the sliced fresh herbs and squeeze the juice of half a large lemon over the dish. Mix well, garnish with extra herbs if desired, and serve immediately.
Notes
- For best texture, avoid stirring vegetables too much while cooking to achieve a nice browning.
- You can substitute basil with other fresh herbs like parsley, thyme, or oregano for a different flavor profile.
- If you prefer a richer dish, add a sprinkle of grated Parmesan cheese before serving.
- Adjust the lemon juice amount based on your taste preference for brightness and acidity.
- This recipe serves 4 as a main dish or more as a side.
