Instructions

  1. Cook Gnocchi: Prepare the gnocchi according to the package directions, usually boiling until they float to the surface. Drain thoroughly and set aside.
  2. Sauté Aromatics: Melt butter in a large skillet over medium heat. Add minced garlic and diced shallot, cooking while stirring occasionally for 2-3 minutes until the shallot begins to soften and become fragrant.
  3. Cook Vegetables: Add the bite-sized mixed vegetables along with a pinch of salt to the skillet. Spread them into an even layer and cook without stirring much for 4 to 8 minutes until the veggies develop a light brown color, enhancing their flavor.
  4. Simmer with Water: Pour in 1/2 cup water and bring the mixture to a simmer. Cook while stirring occasionally until the water reduces by half, which helps meld the flavors and slightly steam the vegetables.
  5. Combine Gnocchi and Season: Add the cooked gnocchi back into the skillet along with salt and pepper. Stir gently to combine evenly. Taste and adjust seasoning if necessary.
