4.2 from 34 reviews

This homemade blueberry syrup is a vibrant and naturally sweetened topping made from fresh or frozen blueberries, perfect for pancakes, waffles, desserts, or beverages. Sweetened with Besti Monk Fruit and Allulose Powdered Sweetener for a keto-friendly option, it offers a delicious, tangy flavor with a refreshing hint of lemon juice.

  • Total Time: 41 minutes
  • Yield: 32 servings

Ingredients

Blueberry Syrup Ingredients

  • 5 cups blueberries (fresh or frozen, thawed)
  • 4 cups water, divided
  • 2 cups Besti Monk Fruit and Allulose Powdered Sweetener (or regular sugar if not keto)
  • 1/4 cup fresh lemon juice

Instructions

  1. Crush and simmer blueberries: In a pot, combine the blueberries with 1/2 cup of water. Use a potato masher to crush the berries, then bring the mixture to a simmer. Let it simmer over low heat for 15 minutes to extract the juice.
  2. Strain the juice: Pour the blueberry mixture through a large mesh strainer into a heatproof measuring cup, pressing firmly on the berry solids to extract as much juice as possible.
  3. Discard solids and prepare syrup base: Discard the pressed blueberry solids, then rinse out the pot.
  4. Dissolve sweetener and reduce: Add the 2 cups of sweetener (or sugar) and the remaining 3.5 cups of water to the pot. Bring to a boil while stirring until the sweetener is fully dissolved. Continue boiling over medium heat for approximately 20 minutes, or until the syrup reduces and thickens slightly.
  5. Add blueberry and lemon juice, boil briefly: Stir in the strained blueberry juice and fresh lemon juice, then bring the mixture back to a boil over high heat for 1 minute to meld flavors and ensure proper syrup consistency.
  6. Cool and store: Remove from heat and allow the syrup to cool. Transfer it to an airtight container, seal, and refrigerate. The syrup will last up to 6 months when properly stored.

Notes

  • If using frozen blueberries, ensure they are fully thawed before starting.
  • For a non-keto version, substitute Besti Monk Fruit and Allulose Powdered Sweetener with regular granulated sugar in the same quantity.
  • The syrup can be used on pancakes, waffles, ice cream, or mixed into beverages.
  • Store syrup in the refrigerator to maintain freshness and prevent spoilage.
  • If you prefer a thicker syrup, you can simmer it longer, but be careful not to burn it.
