Ingredients
Sweet Potatoes
- 4 medium sweet potatoes
Butter Mixture
- 2 Tablespoons unsalted butter, melted
- 2 Tablespoons light brown sugar, packed
- ½ teaspoon ground cinnamon
Toppings
- 10 oz bag regular marshmallows, cut in half (may not use all)
- ½ cup pecan halves
Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat the oven to 350°F (175°C). Line a large baking sheet with foil and spray it with nonstick cooking spray to ensure easy cleanup and prevent sticking.
- Slice Sweet Potatoes: Peel the sweet potatoes and slice them into rounds about ¼ to ½ inch thick. Arrange the slices in a single layer on the prepared baking sheet to ensure even cooking.
- Brush with Butter Mixture: In a small bowl, combine the melted unsalted butter, light brown sugar, and ground cinnamon. Using a pastry brush, coat both sides of each sweet potato slice with this flavorful mixture.
- Bake Sweet Potatoes: Place the baking sheet in the oven and bake the sweet potato slices for 15 to 20 minutes, or until they are fork-tender. Actual time may vary depending on the thickness of the slices.
- Prepare Marshmallows: While the sweet potatoes are baking, cut the marshmallows in half to ensure they fit nicely atop each sweet potato round.
- Add Marshmallows and Toast: Remove the sweet potato slices from the oven. Place a halved marshmallow, cut side down, on each slice. Return the baking sheet to the oven for 1 to 2 minutes until the marshmallows puff up. Watch carefully during this step to prevent burning.
- Top with Pecans: Immediately after removing the baking sheet from the oven, top each marshmallow with a pecan half to add crunch and a nutty flavor.
- Serve Warm: Allow the sweet potato bites to cool slightly, then serve warm as a delicious appetizer or side dish.
Notes
- Watch the marshmallows closely while toasting as they can burn quickly.
- You can adjust the thickness of the sweet potato slices to your preference, but thinner slices will cook faster.
- Feel free to substitute pecans with walnuts or omit nuts for a nut-free version.
- These bites are best served warm for optimal texture and flavor.
- You can use mini marshmallows if preferred, but cutting standard marshmallows in half gives better coverage.
