Ingredients
Shrimp Filling
- 1 lb medium shrimp, shells removed, deveined, roughly chopped
- 1 tablespoon butter
- 1 tablespoon olive oil
- ½ onion, diced
- 1 garlic clove, finely minced
- 1 teaspoon salt
- 1 roasted poblano pepper, skin and seeds removed, roughly chopped
Tortillas & Cheese
- 8 corn tortillas
- 2 cups Monterey Jack cheese, shredded
Instructions
- Prepare the Shrimp: Remove the shells and devein the shrimp, then roughly chop them into pieces. Rinse the shrimp under cold water and set aside.
- Cook the Shrimp Filling: In a large skillet, heat the olive oil and butter over medium heat. Add the diced onion and cook for about 1 minute until translucent. Stir in the shrimp, minced garlic, salt, and chopped roasted poblano pepper. Cook the mixture until the shrimp turns pink and are cooked through, about 5 minutes, stirring occasionally. Remove from heat and let cool slightly.
- Heat the Griddle: Warm your griddle or large flat pan over medium heat to prepare for assembling the tacos.
- Warm Tortillas: Place two corn tortillas on the griddle and cook for 1 minute before flipping them.
- Fill and Fold Tacos: On one side of each tortilla, add approximately 2 tablespoons of shredded Monterey Jack cheese and 2 tablespoons of the shrimp filling. Fold the other side over to create a taco shape and press down gently with a spatula, allowing the cheese to melt and ooze out slightly.
- Crisp the Tacos: Continue pressing the folded taco on the griddle until the cheese side is crispy and golden brown. Flip the taco and press down again to crisp the other side. Once both sides are crispy and the cheese inside is melted, remove the taco from the griddle.
- Keep Warm: Place cooked tacos in a baking dish and cover loosely with aluminum foil to keep warm while finishing the rest of the batch.
- Serve: Once all tacos are cooked, serve immediately while hot and enjoy the crispy, cheesy shrimp tacos.
Notes
- Using roasted poblano peppers adds a smoky flavor; you can roast your own or buy pre-roasted.
- Pressing the tacos helps the cheese melt evenly and creates a delicious crispy crust.
- Serve with lime wedges, pico de gallo, or a simple salsa to enhance flavors.
- Make sure not to overcook shrimp to avoid toughness.
