A delicious and easy-to-make sandwich featuring Trader Joe’s sun-dried tomato focaccia bread layered with deli turkey, fresh tomato, greens, red onion, and a flavorful pesto mayo spread. Perfect for a quick lunch or casual meal.

  • Total Time: 18 minutes
  • Yield: 6 servings

Ingredients

Sandwich Ingredients

  • 1 loaf of Trader Joe’s sun-dried tomato focaccia
  • 7-ounce package deli turkey
  • 1 large tomato, thinly sliced
  • 1 handful of greens (sprouts, microgreens, spinach, etc.)
  • A few pieces of thinly sliced red onion

Condiments

  • 1/4 cup mayonnaise
  • 1/4 cup pesto (e.g., Costco brand pesto)

Instructions

  1. Preheat and Toast: Preheat your oven to 400 degrees Fahrenheit. Place the focaccia loaf directly on the oven rack or a baking sheet and toast it for 5-8 minutes until warmed through and slightly crispy.
  2. Make Pesto Mayo: In a small bowl, combine the mayonnaise and pesto. Mix well until fully blended to create a creamy, flavorful pesto mayo spread.
  3. Slice the Bread: On a cutting board, lay the toasted focaccia flat. Using a serrated knife turned sideways, carefully slice horizontally through the center of the loaf to create a top and bottom piece, keeping the top flat without flipping it over to preserve the crumb texture.
  4. Assemble the Sandwich: Spread a layer of pesto mayo onto the bottom half of the focaccia. Layer on the deli turkey, followed by tomato slices, greens, and red onion. Add dollops of the pesto mayo on top of the greens and onions, spreading gently but avoiding flipping the top bread.
  5. Close and Slice: Gently press the top piece of focaccia down onto the layered sandwich to secure all ingredients. Using a large knife, cut the sandwich down the middle and then across three times horizontally to yield six pieces. Serve immediately and enjoy your sandwich!

Notes

  • You can substitute deli turkey with any preferred deli meat or a vegetarian alternative.
  • Try different greens such as arugula or romaine for varying textures and flavors.
  • To make it spicier, add some sliced jalapeños or a dash of hot sauce to the pesto mayo.
  • Leftover sandwiches can be wrapped tightly and refrigerated for up to two days, though best enjoyed fresh.
