Instructions

  1. Make the patties: In a large mixing bowl, combine the ground turkey with panko bread crumbs, Worcestershire sauce, tomato paste, hot sauce, onion powder, kosher salt, and black pepper. Crack the egg into the bowl and scramble it gently with a fork. Then, gently mix all ingredients together, taking care not to overwork the meat to keep the burgers tender.
  2. Heat the skillet: Place a large cast iron skillet or nonstick skillet over medium-high heat and add the canola oil. Allow the oil to heat until it is hot and shimmering, ready for cooking the patties.
  3. Shape the patties: Shape the turkey mixture into 4 patties about ½ inch thick and 4½ inches in diameter. The mixture will be soft and wet, so handle gently and place the patties directly onto the hot skillet to prevent falling apart.
  4. Cook the burgers: Cook the patties for 4 minutes on the first side without moving them to achieve a good sear. Flip the burgers, place cheese on top if using, and cook for an additional 3 to 4 minutes on the second side. Use an instant-read thermometer to ensure the internal temperature reaches 165ºF for safe consumption.
