Ingredients

For the Cake Batter

  • 2 cups all-purpose flour
  • ¾ cup sugar
  • 1 cup almond milk

For the Apples

  • 4 apples (divided: 2½ apples cored and chopped for the filling, 1½ apples thinly sliced for topping)
  • 2 tablespoons sugar (for sprinkling on top)

Instructions

  1. Mix batter: Line a cake pan with parchment paper and preheat your oven to 360°F (180°C). In a mixing bowl, combine 1 cup almond milk, ¼ cup olive oil, ¾ cup sugar, 1 tablespoon vanilla extract, and the grated zest of half a lemon (if using). Whisk until well blended. Using a fine-mesh sieve, sift in 2 cups all-purpose flour, 1 tablespoon baking powder, and ⅛ teaspoon salt. Mix gently with a hand mixer or whisk until you achieve a smooth, thick batter, being careful not to over-mix.
  2. Add apples to batter: Core and seed 2½ apples but leave their peel on. Chop them into small pieces and fold these into the batter gently using a spatula to evenly distribute the apple pieces.
  3. Prepare cake pan: Pour the apple-batter mixture into the prepared cake pan. Then, thinly slice the remaining 1½ apples and arrange the slices on top in a circular overlapping pattern to create a beautiful apple crown. Sprinkle the top with a mixture of 2 tablespoons sugar and 1 teaspoon cinnamon to add sweetness and a warm spice aroma.
  4. Bake: Place the cake on the center rack of the preheated oven. Bake at 360°F (180°C) for 55 minutes up to 1 hour.
