Instructions
- Prepare the produce: Dice the cucumber, slice the strawberries into rounds, and cube the watermelon. Place all the prepared fruits and vegetables into a large mixing bowl.
- Make the dressing: In a smaller bowl, whisk together the honey or agave nectar, freshly squeezed lime juice, lime zest, finely chopped mint, and a pinch of salt until well combined.
- Toss the salad: Pour the dressing over the mixed watermelon, cucumber, and strawberries. Gently toss everything together to evenly coat all the ingredients with the dressing.
- Chill and serve: Optionally, chill the salad in the refrigerator for one hour to enhance flavors. Before serving, top with crumbled feta cheese and additional fresh mint for garnish. Add thinly sliced jalapeño if desired for a spicy kick.
