Instructions
- Prepare Ingredients: Rinse and drain the white beans thoroughly to remove excess liquid. Halve or quarter the grape tomatoes depending on their size, and chop the fresh herbs finely. Combine all these ingredients in a medium-sized bowl.
- Make the Dressing: In a small bowl, whisk together the apple cider vinegar, Dijon mustard, pure maple syrup, salt, and if using, the minced garlic or garlic powder until the dressing is smooth and well combined.
- Toss Salad: Pour the prepared dressing over the bean and tomato mixture. Toss everything together gently but thoroughly to ensure the beans and tomatoes are evenly coated with the vinaigrette and herbs.
- Serve or Chill: Serve the salad immediately at room temperature for fresh flavors, or cover and refrigerate for a couple of hours to allow the flavors to meld. Stir before serving, as the dressing may settle at the bottom.
