Ingredients
Potatoes
- ½ lb. peeled and shredded Sweet Potato (approximately 1 medium sweet potato)
- ½ lb. peeled and shredded Yukon Gold Potato (approximately 1 large Yukon Gold potato)
Dry Ingredients
- ¼ cup Gluten-Free or Regular All-Purpose Flour
- ¾ teaspoon Salt (divided)
- ½ teaspoon Paprika
- ½ teaspoon Garlic powder
- ¼ teaspoon Black pepper
- ¼ teaspoon Baking powder
Other Ingredients
- 1 Large Egg
- 3 Whole Green Onions, thinly sliced
Instructions
- Prepare Potatoes: Add the shredded sweet potato and Yukon Gold potato along with ½ teaspoon of salt to the center of a clean kitchen towel. Gently toss to mix the potatoes and salt evenly.
- Draw Out Moisture: Gather the corners of the towel and twist to tightly wrap the shredded potatoes into a bundle. Place this wrapped bundle into a bowl and let it rest for 15 minutes, allowing the salt to draw out excess moisture from the potatoes.
- Squeeze Out Liquid: After resting, twist and squeeze the towel tightly to extract as much liquid as possible from the potatoes. Discard the excess liquid collected.
- Mix Ingredients: Transfer the drained shredded potatoes to a large bowl. Add the remaining ¼ teaspoon salt, all-purpose flour, egg, sliced green onions, paprika, garlic powder, black pepper, and baking powder. Mix everything evenly using your hands until combined.
- Form Fritters: Scoop about ¼ cup of the potato mixture and squeeze it firmly in your palm. Gently flatten and shape into a circle about ½ inch thick. Set aside the shaped fritters to cook.
- Cook – Stovetop Method: Heat a non-stick or cast iron skillet over medium to medium-high heat. Lightly coat the pan surface with oil or spray. Place the fritters in the pan and cook for 2 to 3 minutes on each side, flipping and gently pressing them down often, until each side is crispy and browned.
- Cook – Air Fryer Method: Preheat your air fryer to 400°F. Lightly spray the bottom of the air fryer basket with oil. Arrange the fritters in a single layer in the basket and spray the tops lightly with oil. Air fry for 15 minutes, flipping and spraying the fritters with oil halfway through the cooking time. Repeat if cooking in batches until all fritters are done.
- Cook – Oven Method: Preheat the oven to 425°F. Line a baking sheet with parchment paper and lightly spray it with cooking oil. Arrange the fritters on the sheet and spray lightly with oil. Bake for 10 minutes, then flip the fritters, spray the other side with oil, and bake for an additional 10 minutes until golden and crisp.
- Serve: Serve the fritters hot, sprinkled with flaky sea salt or additional sliced green onions if desired. Pair with sour cream or your preferred dipping sauce for extra flavor.
