This Instant Pot Spinach Artichoke Dip is a creamy, cheesy appetizer perfect for any gathering. Loaded with spinach, artichokes, and a blend of cheeses, it’s quickly made in your Instant Pot for a warm, melt-in-your-mouth dip ready in under 20 minutes.

  • Total Time: 15 minutes
  • Yield: 4 servings

Ingredients

Dip Base

  • 1/2 cup chicken or vegetable broth
  • 1 tsp minced garlic
  • 14 ounces artichoke hearts, drained and chopped
  • 12 ounce bag/block frozen chopped spinach
  • 8 ounces cream cheese
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream or plain Greek yogurt
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Cheese Toppings

  • 8 ounces shredded mozzarella cheese (use a block and shred yourself)
  • 6 ounces shredded Parmesan cheese

To Serve

  • Bread, chips, crackers etc. for serving

Instructions

  1. Combine Ingredients: Add broth, minced garlic, chopped artichoke hearts, frozen spinach, sour cream or Greek yogurt, cream cheese, mayonnaise, onion powder, black pepper, and salt into the Instant Pot. Close the lid and ensure the pressure valve is set to the sealed position.
  2. Pressure Cook: Set the Instant Pot to high or manual pressure for 5 minutes. Keep in mind the pot will take 5-10 minutes to come up to pressure before the cooking time starts.
  3. Quick Release Pressure: When the cooking cycle finishes and the Instant Pot beeps, carefully perform a quick release by moving the valve to the side. Be cautious of the hot steam as it escapes. Once all steam is released, open the lid.
  4. Mix in Cheeses: Stir the dip thoroughly to combine the ingredients evenly. Then add the Parmesan and shredded mozzarella cheeses. Stir until the cheeses melt completely into the dip, creating a smooth creamy consistency.
  5. Serve: Serve the dip hot alongside bread, chips, crackers, or your favorite dippable snacks for an irresistible appetizer.

Notes

  • For a vegetarian option, use vegetable broth instead of chicken broth.
  • You can substitute plain Greek yogurt for sour cream to lighten the dip.
  • Using block cheese shredded fresh results in a better melt and flavor than pre-shredded.
  • To keep the dip warm after cooking, use the Instant Pot’s ‘Keep Warm’ setting.
  • Serve immediately for best texture, as the dip will thicken as it cools.
